Homemade Black Bean Tacos with Fresh Pico de Gallo and Adobo Chili Sauce



Ingredients:

For Tortillas:

- 2 1/4 cups all-purpose flour

- 1/2 tsp salt

- 3/4 tsp baking powder

- 3/4 cup warm water

- 1/4 cup olive oil

- Additional olive oil for cooking

For Black Bean Filling:

- 1 can (15 oz) black beans, washed and strained

- 1/2 red pepper

- 1 clove garlic

- 1/2 onion

- 2 tbsp homemade taco seasoning (see below)

For Pico de Gallo:

- Tomatoes, diced

- Red onion, finely chopped

- Cilantro, chopped

- 1/2 lime, juiced

For Adobo Chili Sauce:

- 2-3 chili peppers in adobo

- 2 cloves garlic

- 4 tbsp balsamic vinegar

- 1/2 cup vegan mayo

Instructions:

Tortillas:

1. In a bowl, mix flour, salt, baking powder, warm water, and olive oil until it forms a dough.

2. Knead the dough for 3 minutes, then let it stand for 30 minutes.

3. Divide the dough into 8 pieces and roll out each piece into a flat tortilla using a rolling pin.

4. Cook the tortillas on a cast-iron skillet with olive oil until they're lightly browned on each side.

Black Bean Filling:

1. In a food processor, combine black beans, red pepper, garlic, onion, and taco seasoning.

2. Blend until it forms a smooth paste.

Pico de Gallo:

1. In a bowl, mix diced tomatoes, finely chopped red onion, chopped cilantro, and lime juice.

Adobo Chili Sauce:

1. In a food processor, blend chili peppers in adobo, garlic, balsamic vinegar, and vegan mayo until smooth.

Assembling Tacos:

1. Heat a cast-iron skillet, add a portion of the black bean paste to a tortilla, and top with vegan cheese.

2. Cook until the edges are crispy.

3. Dress the tacos with Adobo Chili Sauce and Fresh Pico de Gallo.
