Peach Cobbler Pancakes

Hello there! It's B the Vegan returning with another simple and delectable recipe. Lately, I've been hooked on peaches, and since I always jazz up my pancakes with fruit, I thought, why not peaches? Originally meant for my menu, this recipe gained popularity after sharing pictures. So, let's dive right in!


Recipe: Peach Cobbler Pancakes


Serving:6 Pancakes


Ingredients:

- 1 cup All-purpose, unbleached, un-enriched flour

- 1 Tbsp baking powder

- 1/4 tsp salt

- 1 cup almond milk

- 2 Tbsp melted vegan butter

- 1.5 tsp vanilla extract

- 2 fresh peaches (rinsed & sliced 1/4 in)

- 1 Tbsp agave

- 1/4 cup brown sugar (half initially, rest later)

- 1/4 tsp cinnamon

- 2 Tbsp water

- 2 Tbsp maple syrup


Instructions:

1. Slice peaches into 1/4 inch pieces and place them in a saucepan with agave, 2 tbsp water, cinnamon, and half the brown sugar. Simmer on medium/low heat until soft.

2. Mix dry ingredients for pancakes. Add melted butter and vanilla to almond milk, mix, and incorporate into the dry ingredients. Avoid over-mixing; the batter should have small chunks.

3. Heat griddle to medium, add vegan butter to prevent sticking. Use about 1/4 cup of mix for each pancake.

4. As you drop pancakes on the griddle, place peaches on top, drizzle peach sauce, and sprinkle with brown sugar. When bubbles form, carefully flip pancakes. Repeat until batter is used.

5. With leftover peaches and sauce, add maple syrup. Plate pancakes and drizzle peaches and maple sauce over them. Enjoy!
