Peach Cobbler Pancakes



Heyyyy! It's B the Vegan back with another easy and delicious recipe! I have been on a major peach kick lately, and I always put fruit on my pancakes, so I decided to do peaches! My initial plan was to add it to the menu, however I think this is a great recipe for everyone to enjoy making at home on a Saturday morning, and also, after I posted pictures, this recipe is in high demand! So lets get right into it!


Recipe: Peach Cobbler Pancakes

Serving: 6 Pancakes



Ingredients

!cup All purpose, unbleached, un-enriched flour

1 Tbsp baking powder

1/4 tsp salt

1 cup almond milk

2 Tbsp melted vegan butter

1.5 Tsp vanilla extract

2 fresh peaches (rinsed & sliced 1/4 in)

1 Tbsp agave

1/4 cup brown sugar

1/4 Tsp cinnamon

2 Tbsp of water

2 Tbsp maple syrup



Instructions

Cut your peaches into 1/4 inch slices (you can leave the skin on if you want) and put them in a saucepan with agave, 2 tbsp of water, cinnamon, and half of the brown sugar, you will need the rest later. Set your stove to medium/low heat, and let them simmer until they are soft. While your peaches are simmering, Mix all the dry ingredients for your pancakes. Add melted butter and vanilla to almond milk, mix and add to the dry ingredients. Mix everything together. DON'T OVER MIX, your batter should have small chunks. Heat your griddle to medium heat and add some vegan butter so the pancakes won't stick. Use about 1/4 cup of mix for each pancake. Once you drop the pancakes on the griddle/pan, put your peaches on top of the pancakes and drizzle the sauce from your peaches over the pancakes, and sprinkle them with brown sugar,. Once your pancakes start getting bubbles, carefully flip them. Repeat this until you use all the batter. You will have peaches and sauce left over, add maple syrup to leftover peaches and sauce. Plate your pancakes, and drizzle peaches and maple sauce over the pancakes! Enjoy!!!
